    Doubled the recipe, which can be troublesome - it took quite a bit longer. Instead of finely chopping the onion, I chose to cut it into thin slices and then caramelized it on its own before adding the cream and apple juice as instructed in the recipe. The flavors were terrific - something really special about pork, apples, onions and cream. Could not find pancetta, so I used thick cut bacon, and it added a great crunchy texture to offset the rest of the dish. Well worth the investment of my time. Will make again.

    Liked them, but would not make again. What is the purpose of all the onion? Not enough apple & too much pancetta. My printed recipe didn;t tell me what to do with the pancetta, so I guessed. Not on my favorite list.

    The BEST pork chops we have ever eaten. So tender and moist. I made them for my husband's birthday and don't think I could make them any other way ever again. I did use extra thick boneless chops and cooked them very low for a bit longer! Delicious!
