I made this last night for dinner along with Giada's champagne risotto. My husband said this was his new favorite and could eat it at least once a week! The pork was very tender. I used boneless chops and they were quite thick so I had to cook them a little longer. Definitely a recipe to use again and again. I don't think you need quite as much pancetta as the recipe called for, probably half that amount would be sufficient. All in all, another delicious recipe from Giada!!

Pork, Apples, Sweet....I have NEVER liked these things in one meal.....but, THIS WAS AMAZING!!! I can't believe it. Absolutely delicious! I made a few changes though....I didn't bother with the brandy and I deboned the pork. I am still in awe that I cleaned my plate! :

I really enjoyed this dish and it was quick and easy provided you have all the ingredients and I almost did. I substituted bacon for the pancetta and half/half for the heavy whipping cream and it was still delicious!
I would watch how long though you heat up the pork chops in the sauce. I used center cut thin chops bone- in the middle and after five minutes they felt done so I removed them from the pan. They were a little dry so next time I prepare this dish I will wait until the sauce is bubbling and together before placing the chops back in pan to coat only and stop cooking process immediately.

Definitely a recipe I will be making again. I did change a few things. I didn't have any brandy so I omitted it. The only other thing I did differently was used honeycut apples and put them in the crockpot instead of simmering on the stove. The meat was so tender and delicious!!!! Thanks Giada! You never disappoint
