    I've never used fennel before and I was hesitant. I am now a fan! It has a refreshing, clean taste and mellows out when cooked. The pork chops came out perfect. For the reviewers who had dry pork chops - I have recently started using meat thermometers when cooking and it helps. I usually "know" when something is ready but its nice to have the back up. They are inexpensive too! I am thinking of making this again with chicken. Giada rocks!

    I made this last week for my girlfriend. I had watched the episode and was nearly drooling when I saw how this came out so I got the recipe. I don't know how everyone is complaining about overcooking the pork chops?!?! Mine came out just cooked, extremely moist and so delicious. I went to Whole Foods and had the butcher cut me 2 2" pork chops-that's the key to it. I didn't put it all the way up to high heat-I actually had it on 8. I had never tried fennel before actually and now I want more of it! Raw or cooked it was just such an interesting flavor. Thanks Giada for this wonderful recipe! My girlfriend and I cleared off our plates with this one! Even my mother, who is a "plain Jane" person when comes to what she eats couldn't get enough of the aroma from when I cooked this! Everyone should give this a try! It's relatively inexpensive to make and filling enough that the only thing you may want to have with it is a nice piece of Italian baguette if there's any sauce left! I love Giada's recipes and if you know what you're doing in the kitchen, they are the perfect measurements and so flavorful and delicious. I use them all the time and have to say that she is the most accurate chef when it comes to measurements for recipes. Keep it up! Can't wait to try more! =D

    Similar to the reviewer below, I also overcooked the pork. Nevermind that b/c that was my error. The sauce is FANTASTIC! I was a little scared about how fennel and shallots and capers would turn out...it was my first time using fennel. Turns out fennel does smell and taste like licorice when raw, but after cooking, it is mild and amazingly delicious. LOVE THIS SAUCE!! Try it! You won't be disappointed!

    My husband somehow had never had a porkchop before, so I decided to try this one on him. The time was way to long for the porkchop for me and they were so tough and overcooked. The sauce was really good, but watch your pork!

    I did use one fennell bulb, and one leek. This added some sweetness. Also, 2 cloves of garlic.

    The next day, the left over sauce was excelllent on bread brushetta- style.

    Next time, I will brine the chops. The 2" chop thickness is essential to make this dish work.

    I will entertain with this one! Delicious

    I had never cooked with fennel before and this recipe is great! I will definitely make it again and serve it to guests. I saw someone's comment about it being bland, but mine had a ton of flavor. I used fresh tomatoes from my garden as well as a little extra wine. I did not have fresh lemon so just dumped in a splash of lemon juice. It was great!

    I added garlic. The recipe was bland it was not bad , but it did not meet my expectations. I will not make it again. Too much cutting for a bland recipe.

    this recipe was awful... extremely salty and the pork was too dry. i followed the recipe to a T and it was horrible. the flavors were not very appetizing. you must really really like tomatoes i mean literally able to drink v8 or eat a tomatoe whole. fennel is not that great of a veggie hardly any nutrition and the taste is nothing special... lets just say licorcios flavor is not something u wld enjoy cuz i know u have all heard food network star describe it like that. anyways please save yourself some time and dont make this recipe. all i wanted was some pork chops your better off making them with shake and bake , some maccaronni and broccoli. i know why i disliked the recipe i dint pay much attention to the ingredients...... all those tomatoes yuck! but hey if thats ur palate go head.

    This a solid recipe. Good flavors. I did the recipe with three bone-in pork chops that I brined for two hours. I brine all my pork except for tenderloin. I also lowered the heat to a simmer once all the ingredients were in the pan.
