Great recipe; simple prep and cooking. Made it for 2 with 2 in center cuts (were a little under 2 lbs. Added some Pernod before the wine to accentuate the licorice flavor of the fennel.

i first made this in 2008 as a special dinner for my husband. Ive served it now as one of our Family Dinner night favorites. " Family Style" large serving platter and everyone was able to take a scoop of all there favorites on top of the pork chops. It is now one of the favorite meals that we all love to gather around and have some laughs and good wine.

My family went crazy over this recipe but I used chicken thighs instead of pork. Since chicken thighs take a little longer to cook, I finished the chicken with the tomato/fennel mixture in a baking dish and baked at 350 degrees for about 25 -30 minutes. I added the final touches of parsley, lemon zest, and capers and served over a whole grain rice. There were no leftovers- so good!!!

I loved this recipe! The combination of the tomatoes, fennel and capers was fantastic. I think I would use bone in chops next time and brine them before cooking as they were a bit dry. Otherwise this was awesome and I'll definitely make it again, and possibly even try it with chicken as well. I used dry Vermouth for the white wine. I served it with Parmesan risotto done in a pressure cooker.

This was such an incredible dish! We have decided this is our new favorite pork shop dish. So easy and so many flavors, it really makes leftovers exciting. Next time I will make more!!

This was great - and quick. I used a can of Rotel for the tomatoes - gave it some extra punch (although my can was mild. This is going to be a keeper. Thanks Giada.

I brined the pork chops and added some chicken broth and let the sauce cooked for a few minutes so the pork chops would not need more than 10 minutes in the sauce. It was fabulous.

I don't even like pork chops that much, but I love this recipe. The fennel/tomato sauce is delicious! Very easy to cut recipe in half for small families, thanks Giada!

Excellent recipe!! My husband does not like fennel, so I cooked his pork chop separately and told him just to try the sauce. He LOVED it!! I loved it - was quick, easy, and very very yummy!! Followed the recipe except used green olives instead of capers, since neither my husband or I like capers. Good job Giada!
