I made this for a special holiday dinner and it turned out amazing. I've never made a pork loin before but found this tremendously easy. The sauce was the ultimate touch though. It was not only delicious but added a very sophisticated yet comforting tone to the meat. Thanks Giada!

The pork loin was wonderful, and the port sauce was a perfect compliment. However, I was unable to find the mission figs as called for in the recipe and used dried Kalamata figs instead, so I don't know how it affected the way it tasted. And don't cook the pork loin a minute longer than the 45 minutes. It was perfect. Also, in Alabama you have to purchase Port wine in the liquor store, not in a wine store.

This dish is not only great tasting with the salty pork and the sweet sauce but it is beautiful as well. The sauce is a rich mahogany color on the pale pork was a hit. All of can say is it is perfect for a holiday meal.
