Today we made these and added fresh grated parmesan and a spritz of lemon juice. I paired these chips with some pita bread and chopped tomatoes (with evoo, salt and balsamic vinegar and hummus. What a tasty and healthful lunch.

I made the potato chips & dip only for a party - it takes so long to cook the potatoes in batches & you need so many to make a decent amount - they shrink slightly in the oven & never seem to go crispy, they just cook through & go soft. The dip was AWFUL - tasted like acid gone-off mayo, yuk! I tried to add some garlic, cilantro & sour cream to it to make it taste less acid, it improved a little but was still bad; I won't be making either of these items again. Much easier to buy crispy potato chips in a bag from a store!

Kale Chips were great - didn't make the potato chips this time, trying to cut out of diet. My entire family liked the chips; be careful a little salt goes a long way on these. I roast all my veggies, broccoli, cauliflower, brussels sprouts and asparagus. They all get a nutty wonderful taste. The kale tastes very much like the broccoli and oh so good. Try them for a healthy alternative. Giada never lets us down; her recipes are alway spot on and my families favorites.

Tasty. They are feather light and super crunchy. The tiny bit of salt makes them perfect seasoned. I'd like less oil on them, so instead of drizzling next time I'll try the spray olive oil. They did take a few extra minutes in the oven over the stated time. Quick and easy. Best of all they are healthy. Great, will make again.

The kale chips are great! Flavor wise they tend to remind me of my mom's fried okra. Other reviewers on here have mentioned it, but these cannot be eaten with a dip... unless you plan on using a spoon! They are like crispy tissue paper and often break just transferring them from the pan. Nonetheless, a delicious alternative to fried chips!

I only made the kale chips but they are delicious! I made them to go with Giada's turkey meatloaf with feta and sun-dried tomatoes, also delicious, and before i could get them on the table my mother and I ate the whole thing, I will definitely be making these again! =]

Saw this episode again last week so I decided to try making them today using potatoes. I know my oven takes longer to cook, so I set it to 425 instead. Used the thin option on my slicer, two small russets since this was test run, used olive oil spray instead of pouring, and made sure to preheat the sheet pan along with the oven as directed. Lined with parchment paper, made sure none of the edges touched, and baked for 12 minutes. Flipped them, set the timer for another 12. At this point some had already burned, and others were still chewy. Set the timer for 6 minutes again. Same result, some burned some still not done. All in all, this method is not worth the effort for me. I am giving it 3 stars because it is a good recipe in theory, but she may have a convection oven that will make the differece between her chips and ours. I will either go back to frying my chips, or experiementing more with this method when i have more time and patience.
