This was easy and very good. I could only find pearl onions but they came out very sweet. Crowd pleaser for sure-you will be fighting for the onions.

I made this dish for my Mother on Mother's Day. I could not find the cippolini onions so I simply quartered 3 medium onions and put a toothpick (soaked in water for 15 min. through the wedges to keep them together. My mother is a very bland eater who sticks to plain mashed potatoes with NO salt or pepper, but she absolutely LOVED this dish! She declared it the best potatos she has ever had! I will make this a permanent part of my cooking, but next time I will use sea salt (which Jamie Oliver uses in a similar recipe so it sticks better and adds a bit of texture to the potatoes. I also baked these an extra 10-15 minutes to get them really dark and caramelized like we like them. The next day my husband and I reheated the potatoes in a skillet with a bit of olive oil and they were still FABULOUS!!! My 15 month old daughter also gobbled them up. Giada has done it again!

This was a great side dish with the Roman Chicken. Couldn't find chipolinni onions though, so I had to substiture regular pearl onions. Still came out great. I was never a big fan of rosemary or roasted potatoes for that matter, but I would definitely make this again!
