Yum. Next time I will use less vinegar dressing. It seems to hide the taste of carrots. We might also cut carrots into matchsticks as wel for same reason. My shreds were too short.

A 50-50 hit at the buffet. Some guests loved the salty, tangy flavor. Others thought it was much to salty but that is the nature of the prosciutto. The carrot mixture definitley does not need added salt. I used the bag shredded carrots making this s simple appetizer to put together quickly.

These are fabulous - tasty and light. For those who are not
Familiar with prosciutto, it is very important to buy it from a place where they know
how to slice it properly - which is paper thin.

My store did not have prosciutto on the shelf nor fresh basil. Shouldn't have gone shopping right after Thanksgiving. So I used deli sliced ham (I love prosciutto and I know I will love it with this I used about a teaspoon of dried basil. It was great even with my substitutions. I can't wait to try it with prosciutto and fresh basil. I will be making this to take to work to have as a snack.

I have made the Carrot Bundles several times now for parties from 4 to 24 guests and they are always a hit. The combination of flavors is so delicious. Lots of compliments for very little work! When there are leftovers from the party I eat them for my lunch the next day.

I made these appetizers to take to a friend's fancy engagement party in NYC. I had many people ask me where I ordered them from! They are very salty, but when you are enjoying some cocktails, that is a perfect flavor. My suggestion if you wanted them a bit more salty/savory would be to add one teaspoon of light brown sugar to the balsamic mixture. That has turned out fantastic for me too! I love Giada's recipes. Not only are they platforms for more culinary ideas, but I actually enjoy reading her cookbooks because her flavor combinations are so unique while being very classic Italian. One tip I would give to people who have any trouble with her recipes is to always taste throughout your meal preparation. If it tastes good, you're on the right track. Good + time = great!
