I made this with foccacia as suggested, but the one I bought was too salty (it also has garlic and herbs. The flavors together were really good though. I tried it again, only on a toasted English muffin and enjoyed it even more. It would make a great appetizer. I will try it again with a simpler foccacia next time. Yum!

Made this for dinner last night and it was delicious! I couldn't find focaccia, but I used fresh Italian bread and it worked great. Loved all the flavors and the ingredients were totally affordable (even on a college student's budget. Will definitely be making this again very soon!

This is one of my all time favorite sandwiches to make, and eat! I love the combination of melon with arugula. Fabulous lunch. You won't be disappointed!

I wasn't sure about eating cantaoupe on a sandwich, but I'm open to trying something new, so I did. I used deli sliced turkey instead of the prosciutto and I couldn't find any arugula. However, it still tasted great! I will definately be keeping this recipe for summertime lunches. Thanks! ;

All the ingridients combined felt so fresh, refreshing, and light. Very inexpensive too. I thought the brie would overwhelmed the dish but not at all, now I add more brie than my first time. I added less arugula than Giada recommended, because I felt it got too strong and peppery. Instead of focaccia, I used potato bread, it adds more flavor and sweetness to the melon, prosciutto, and brie. I brought it to school for lunch; very easy, light, and inexpensive. Got all of my friends addicted to this recipe.

I made this for some very picky eaters...and they LOVED it ! I spread garlic butter on one of the slices of bread, before putting it on the panini grill. Oh by the way, WAL-MART carries
focaccia bread and BRIE cheese. I have made these sandwiches about um...10 times so far.. They are great !

We loved these. I didn't have arugula, but I had everything else, so I used fresh basil from my garden.
The flavor blend was awesome. I'd suggest that one-star Casey from Austin (who can't spell palette obviously doesn't have one, either. ;-
The sweetness of the canteloupe, the slight astringincy of arugula (or basil, the creamy buttery flavor of the brie and the saltiness of the prosciutto, all warmed on a substantial bread created an awesome mouth feel and excellent multi-leveled taste experience.
I highly recommend these. I think that next time I have a small gathering, I will make these and cut them into bite-sized pieces for appetizers.

You never seem to amaze me Giada...The cantaloupe and the prosciutto and the creamy brie cheese...its almost feels wrong to have something that tastes so good!!!!!! Great recipe...my friends will love how unique this is. I'll be they never had this before!

i just made this for a quick lunch. the supermarket had all the ingredients and it was pretty inexpensive considering how many of these little sandwiches i can make. the melon and prosciutto complement eachother SO well.

except for the bread, finding the rest of the materials was super easy.
The Panino tasted wonderful though.
