Made this but forgot the egg, had a bit of broccoli in the fridge and not enough spinach, finechopped the broccoli and substituted it for the lack of spinach. It was delicious. My son is making it again right now for his girlfriend. Good job Giada.

Yum!!! I'm not a spinach person, but I love these little bundles of love. My mom makes them and she is not a person that likes a difficult recipe. I love when she says she wants to make these.

I'd give this recipe five stars except I care for the texture of the egg roll wrappers. I think its a really great idea when you are short on time though! Also my husband preferred a little less spinach.
The next time I made these I used a basic pasta dough (http://allrecipes.com/Recipe/Basic-Pasta/Detail.aspx and doubled the recipe for the filling except for the spinach. I pulsed the spinach and prosciutto in a food processor so you didn't get chunks of spinach and then just mixed in the rest of the filling ingredients in the food processor.
Then, I rolled out the dough with kitchen aid pasta roller attachments to a setting of 5, and used my ravioli press to make raviolis. You could also just cut out circles or squares like Alton's method if you don't have a press.
If you do a huge batch like that you can freeze them whatever you don't want to make and just pop them into boiling water for a few minutes to cook later on.
I also used sage instead of oregano for the butter sauce.
Every time I make this we get huge compliments! And if I take it from the freezer it's taken me all of about 10minutes to get homemade ravioli onto the table!

I paid attention to some of the other reviewers (made sure the spinach was really dry, used a cookie sheet and had no trouble. I took time to make sure each little ravioli was sealed well and they held together just beautifully. And what a taste! Even the simple sauce was outstanding. A keeper for sure!

I made this after seeing her do it on her show and it looked so delicious i tried it over the weekend. The prosciutto is expensive, but I got the packaged kind for less and it tasted just the same. I also could not find wonton wrappers and used puff pastry and baked it for 25 min instead of boiling to avoid it being soggy. It was the best raviolis i've ever had and the sauce is mouth watering! My friends and family adored it!

These ravioli were delicious! My husband said that they were the BEST and he has eaten ravioli in the best Italian restaurants here and in Italy. I followed the recipe exactly and the result was outstanding. The prep time did take me a lot longer than the recipe's estimated prep time. I have found this with other Giada recipes. It may be that I am slow in the kitchen!

I made this last night for dinner and it was delicious!!! The only thing i changed was that i added garlic to the mixture. and also to the butter mixture. I found this very easy to make. there was alot extra so i put it on a cookie sheet and froz it.
Just like fron the show. Making a homemade ravioli out of wonton wrappers is genius. Thanks this recipe i'll add to my collection!!!

I made this dish for some of my friends. I couldn't believe how much we all loved it. They insist that I keep making it for them & I don't mind @ all since this was so easy and fun to make.

I ddi not like this recipe at all. It was very time consuming to make, but more importantly it tasted awful. The butter sauce made as all sick. I would not recommend this recipe.
