Ingredients
- 1 (6-ounce) package raspberry-flavored gelatin
- 1 cup boiling water
- 2 cups Prosecco or other sparkling wine, chilled
- 1 1/2 cups frozen raspberries, not thawed
- 1/3 cup mascarpone cheese, room temperature
- 1/2 cup walnuts, toasted and chopped
Directions
Whisk the gelatin and boiling water in a medium bowl until the gelatin is dissolved, about 2 minutes. Refrigerate until lukewarm, about 25 minutes. Stir in the Prosecco. Cover and refrigerate until the gelatin thickens but does not set, stirring occasionally, about 1 hour. Stir in the raspberries (bubbles will form in the gelatin mixture). Divide the gelatin among 6 Champagne flutes or individual dessert bowls. Cover and refrigerate until the gelatin is set, at least 2 hours and up to 2 days.
Dollop the mascarpone cheese atop each serving, then sprinkle the walnuts over and serve.

I made this for Easter this year. I changed it up by making it family style (3X's recipe instead of single cups. By using mixed berries inside, fresh raspberries outside, YES I only used "JELLO" brand, made a whipped cream with the cheese (all this helped to add sweetness.Then used sliced almonds (walnuts make my teeth itch! It was a hit, everyone wanted the recipe and I was only to happy to share it!

We made this for a Christmas Eve party. We used the Mascato wine for the adult version and Ginger Ale for the kid version and we mixed the marscapone with sugar and a small amount of vanilla extract to lighten the flavor. The gelatin tasted amazing before setting and so did the cheese after modifying it. We noticed the other reviews about the gelatin tasting bitter and the cheese tasting bland, so we were very careful to add the sweetness in.
We used these cute little plastic clear crystal cups that you can get at the grocery store to segment each portion of the jello, but the jello ended up not setting. We were heartbroken.
We followed the recipe to the letter. We did every step based on a timer and at the last step I noticed the jello was still in a very liquid state. No worries, though, I thought. It still has two hours to go and it will set. However, 3 hours in with party guests waiting, I checked the jello and realized it never set!!! It was totally liquid. :o( Probably the day of the event is not a good time to try a new recipe.
I should add that we used raspberry gelatin from Whole Foods and not the "JELLO" brand of gelatin. I'm tempted to try again with JELLO just because it tasted so good when we sampled it. It would have been a hit if it had set. Darn!

This recipe was so easy and the presentation is great. I thought the taste was just average; I might add two different berries next time in order to jazz up the flavor.
