You can create up to five timers

Ingredients

  • Ice
  • 1 cup Mint Simple Syrup, recipe follows
  • 1 cup single malt Scotch whiskey, such as Glenfiddich
  • 5 fresh mint sprigs, plus extra for garnish
  • 2 cups prosecco, chilled

Directions

In an ice-filled pitcher, mix together the Mint Simple Syrup, whiskey and 5 mint sprigs. Slowly pour in the prosecco and mix. Pour into glasses and garnish with mint sprigs

Mint Simple Syrup:

  • 1 cup sugar
  • 1 packed cup packed fresh mint leaves

In a small saucepan, combine the sugar, 1/2 cup water and mint leaves over medium heat. Bring to a boil, reduce the heat and simmer until the sugar has dissolved, about 5 minutes, stirring occasionally. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using. Yield: 1 cup.

    Very refreshing for a whiskey cocktail with the addition of the prosecco. I recommend halving the amount of simple syrup unless you like very sweet drinks.

    This was a bit too sweet for my taste. Perhaps next time I will increase the water in the mint simple syrup. I used Jameson, so this was technically a Prosecco and Irish Whiskey Julep.
