For dinner tonight, I made this quinoa dish to pair with some ginger-soy-lime grilled shrimp (Bobby Flay recipe. We had a side of grilled pita bread with some hummus as well. I thought it was a nice flavored quinoa dish.
We liked the crunch from the toasted almonds and the hint of mint and lemon zest. For my sister who is not an arugula fan, she wasn't crazy about that flavoring in there, but I think perhaps it could be left off or replaced with something else for those who may not like the bite of arugula.
All in all, I am always looking for a good quinoa dish and this is a keeper.

We had this dish last night and it was a big hit! The quinoa and veggies made it a salad and side dish rolled into one. It makes quite a bit and the leftovers were good cold. I did squeeze fresh lemon over the top which I would do again. A great recipe to introduce the family to the super food quinoa.
