We loved this recipe! I used garbanzo beans instead of hominy and added twice the quinoa and lime. I also substituted honey for the agave. The flavor was still delicious with the added ingredients. I also just cooked the quinoa with water per directions on the box and do not think I sacraficed any flavor. We ate the salad for work week lunches with and without the butter lettuce. Next time I will add some lemon cucumbers. This will be a salad we definitely rotate into our food plan. I also think the dressing is yummy and can be used as a base for other salads.

I thought it was tasty and did add some sliced tomatoes and scallions.It makes a lot!

This is a quick and easy recipe - another way to get quinoa into my diet. It is a light flavorful salad where we can adjust the seasonings to our taste. I used a mix of white and yellow hominy in the dish (my first experience with hominy and quite liked it. The only change I would make is to maybe cook or steam the hominy for few minutes before I add it to the salad. I think the butterleaf lettuce completes the dish. Fun food I would say!

This recipe is ok, it's just slightly boring & lacking in flavor. I wasn't a fan of the hominy either - this was my first time eating it & I won't be eating it again! I used couscous instead of quinoa as my husband doesn't like quinoa.

This was easy & delicious. I decided to squeeze a little bit of extra lime juice on top of everything once it was plated and it made it extra yummy. I will definitely make this dish again

This was such a surprise of interesting ingredients that worked so well together. I decided to use both white and yellow hominy as I couldn't decide which type to use and it worked as well as made itvmore colorful My family especially my husband just raved. I think the butterleaf lettuce adds such a wonderful contrast and crunch. This is a definite do over.

I liked the flavors in this combination of quinoa, hominy and black beans much better before I mixed in the dressing. If you prefer simple, direct flavors from your dishes, you may want to consider only mixing the dressing into a portion of it first, and then deciding, or simply tossing it with a little good olive oil. I wish I had. Also, the recipe makes at least 6 main course servings, more like 8. Still, I did like this dish.

This is beyond yummy! I used vegetable broth instead of chicken broth for a true vegetarian dish and the result was fabulous. The dressing is the key component. The cumin is perfect!
