I make these every year for Valentine's Day. This year I forgot to add the melted butter. They were just as good and now fat-free!

I love how quick and easy these were to make. My daughter enjoyed licking the raspberry cream out from the center before consuming the cupcake... pretty fun (and delicious.

Made the strawberry version and they were a big hit! Nice and light with just a bit of sweetness (perfect for my dad who isn't a big sweets person. A friend we invited over said they were better than those at Magnolia Bakery! A definite keeper.

I made these cupcakes today for my family. I couldn't decide between strawberries or raspberries--so I made some of each!!
Also, to "compare", I made some with softened cream cheese beaten into the filling and some just like the recipe.
They were ALL delicious. We almost wiped them all out, trying to decide which one was our favorite.
Unanimously, our favorite was with strawberries, and with the cream cheese. But for a lighter treat, make the recipe as is. Thanks, Giada!!

Everybody loved them! Super light and perfect for summer. I only ended up needing about half of the raspberry whipped cream, so I will cut that in half next time to save a few bucks on the berries.

Delicious - I used strawberries. I think next time I may cut the almond extract in half.

This recipe was so great that I had 3 people tell me I needed to go into the cupcake business! I did do something different, and that was only because I wanted a frosting I could pipe out of a pastry bag that would hold its shape for an extended period of time. It came out great. I made the cupcakes and frosting according to this recipe, then I made a cream cheese frosting and I folded the raspberry whipped cream frosting into it. Superb!!!

    These cupcakes were awesome!
They were light and sweet and they were a huge hit!
They were very easy to make! I am only 11 and I made
them all by myself! My family loves them!
    I didn't use almond extract because I don't like
the taste of it so I used about 3 teaspoons of vanilla
    extract.
Make these cupcakes! They are AWESOME!!!! =
