Arugula is sometimes difficult to find where I live (10 miles from the Mexico border, but was lucky to find some the first time I made it. Awesome! Next time I couldn't find it so I substituted baby spinach and a pinch of red pepper flakes. Since then I've been using spinach, and adding about 1/4 cup red wine--Cabernet or Merlot--to help the wilting process. Still turns out great, and always VERY pleased dining guests!

Made this last night for dinner - it was delicious! Husband loved it too. The only changes I made was in not draining the tomatoes and not adding the pancetta (didn't have any so decided to wing it w/o it. Will definitely make this again!

Thank you Giada for this great recipe! My family & friends absolutely LOVE it! It's quick and very easy to prepare. Two things I do change about it is that I use spinach instead of the arugula and I don't drain the canned tomatoes. I find that the ravioli soaks up most of the sauce and that it's nice to have a little extra when you go to warm up the ravioli the next day IF there's any left!

Thank you, Giada! This is my absolute favorite weekday dinner! It is so quick to prepare but delicious and pretty enough to serve to guests. I make this at least once per month!

I LOVE this recipe because it is easy and so delicious! I did, however, variate the recipe a little. Instead of bacon, I used finely chopped roasted chicken breast meat. I did the same thing with it as the recipe called for with the bacon. It is best served fresh. If you use for the second day, I suggest you cook the ravioli separately for freshness until ready to eat. Easy and delicious!

Hubby and I loved it! I substituted bacon, couldn't find pancetta at local store, but will before next time. My husband is Sicilian and very particular...this is now one of his favorites. Thanks Giada!
