I loved the ease of making this potato salad! I was so fresh tasting and was the perfect compliment to a summer day! Once again you have out done yourself Giada

I made this for a Memorial Day cookout because the reviews were great and it looked like it would taste different from the normal cookout fare. Wow. This is an awesome salad. The flavors blend beautifully and compliment just about any meat or poultry dish. Everyone loved it, and my husband hasn't stopped talking about it and asking me to make it again. I definitely will--many times! This recipe is one of only a few that I didn't change at all, and it's perfect. I did have to triple it for the cookout, and in that case I would suggest just doubling the oil rather than tripling it, because you don't want oil laying in the bottom of the bowl when all of the salad is gone, which it will be! Just thinking about it makes me crave it again. Make this. You won't be disappointed.

Because my husband and my daughter didn?t like mayonnaise, I decide to try it?? this is a very good choice for a potato salad. Amazing! The thyme gives this special ?kick?!!!! I think next time I?ll try with yellow pepper for extra color.
Excellent choice for take to the lunch?s office

This salad tastes like summer in your mouth. We have made it with just potatoes we have on hand instead of the new potatoes and it didnt make a bit of difference. Thinking of eating it just makes me smile.

I made this salad as a side dish for our Mother's Day dinner. Wonderful. The only thing I left out were the black olives since my mom doesn't like them. Otherwise great dish and sadly only had a tiny amount left over for me to enjoy the second day. I might make this again as a main dish with shrimp or chicken added.

I just made this. I didn't use the capers, since I'm not a big fan and it was a great hit! I think maybe next time I'll be a little creative and swap out the potato with tortinelli. A great replacement for ordinary potato salad.

Followed recipe as written and it was so very, very good! A light substitute for the traditional "heavy" potatoe salad. Great for those "hot" summer days or picnics.

Fixed it for a light Spring early dinner and it was a big hit. Finished the leftovers for lunch the next day and it was still delicious. It will be a great salad to take on a picnic. Another never fail Giada recipe!

Excellent recipe -- next time I think I'll add a few more capers and olives. I also substituted arugula for parsley. It was YUMMY!!

My wife and I are big fans of ripe tomatoes to the point that we do not refridgerate them as they loose their flavor.
