    I have always wanted to attempt risotto, and after searching the site, I decided on Giada's recipe. I remember watching the episode and figured it was worth a shot. It was so delicious! It is easy enough to do and you still feel like you accomplished a culinary feat. The parsley adds such a nice kick, and it turns out so creamy and delicious as you continue to add chicken stock. The only thing I could see to improve it would to be add some meat (ham, prosciutto, etc for some extra protein. But overall a great recipe! I will definitely do it again!

    Another 5 star recipe from Giada! I followed the recipe exactly and served it with crab cakes and asparagus. My fiance loved it!

    I would expect nothing less from Giada; always reliable. I?ve made this many times, but it?s really just a jumping off point for foodies to be creative and add their own ideas to the dish (artichoke hearts, dried tomatoes or mushrooms, red white wine, etc.. To Henry from NY:

    1. Please don?t skew the average star review of a recipe by rating it before you?ve even cooked it!

    2. What are talking about when you say you?ll ?adjust down from 8 cups of broth as I will not be using as much Arborio.?? The recipe calls for 3 ? cups of broth; so if you?ll be using less Arborio, you?ll need even less than that!

    Okay, I looked on Food Network site for Risotto. I am going to mix two or Ms. De Laurentis recipies, I want mushrooms (I could not find dried porcinis and I will adjust down from 8 cups of broth as I will not be using as much Arborio.

    I was going to go with Mario,, but the idea of red wine was too intriguing. Nobody to satisfy but me....

    I loved this risotto and so did my company! I substituted the peas for asparagus and the parsley for fresh basil. The asparagus gave the dish a nice crunch and the basil was a great touch. Definitely recommend adding mushrooms, I didn't this time because one of my the people who was coming to dinner doesn't like them, but it would have paired well.

    In all honesty I have never been disappointed with a recipe I have gotten off this site in the 5 yrs I have been cooking, but this Risotto was just bad. The wine and onions do not work together and the peas just added to the disappointment. To top it all of it looks like it comes from a Dr. Suess book.

    This is a wonderful risotto recipe. In addition to peas (i actually added a little over a cup I added a handful of frozen asparagus spears, snapped into pieces. I also had a little shy of a cup of red wine left in a bottle so i used it all. I really enjoyed the flavor and will continue to use the increased volume of wine. Great paired with a cutlet of veal or chicken!

    I love Giada and her recipes! She always comes up with interesting ideas and she's so warm and friendly on her shows. This Red Wine risotto is so great I wish I thought of it! I've made it about a hundred times for a client and he never wants risotto any other way. Wouldn't change a thing about the recipe.

    This risotto was so delicious. My husband had never had a risotto dish and he justd loved it. It's one of those dishes that you just sit in silence eating, it's that good. I used white wine instead of the red because I had white on hand. We will be making this one again for sure!
