    For some reason I've always been too intimidated to make risotto, but this was a no brainer! I didn't have all the ingredients on hand, so I instead of pease I added chopped asparagus in at the same time as the onions. It turned out so delicious, I can't say enough good things.

    i love this recipe. so easy and worth the time! i probably ended up adding more than 1/2 cup parmesan cheese.

    This is great for a Lenten supper, if you do not like seafood. I thought it was very good, but maybe needed a little more flavor. I will make it again, though

    This was the first time risotto was made in my house, and it's became an immediate family favorite. My dad "died and went to heaven." The flavors blend in so well and the parsley makes it absolutely perfect. :
