    This was the first risotto I've ever made or even tasted. The recipe was easy, but a little time consuming. I used Arborio rice. The end result was different in color than food normally eaten (purple & green, but was surprisingly full of flavor. It came super creamy, but had a little "bite" to it...I was expecting the rice to be super soft. Is it normal for the rice to have a bit of a bite? Served it w/ steaks...went great together.

    This recipe far exceeded our expectations. It was my first time cooking risotto and I can't imagine it tasting much better than this. My husband is not a fan of starchy food or meals made up of mostly carbohydrates, but he loved this meal.

    I love this take on risotto! It is unusual to people and I love to entertain with it. Everyone oos and ahhs over it!

    I adore risotto and this recipe doesn't disappoint. To increase the fiber nutritional value I recommend substituting medium pearled barley for the rice -- it comes out just as creamy and delicious -- really, you won't notice the difference.

    I love this recipe. It is colorful and delicious - the flavor of red wine is so delicate and perfectly complements the greens put in this dish. I use asparagas tips in mine and it always gets rave reviews from my dinner guests. Delicioso!

    This dish was so easy to make and so smoothe and creamy....great flavor. The peas add a great bit of color and the wine makes the whole dish....please try it.
