This is an excellent recipe for rice pudding, it was delicious, and Giada's tip for using risotta rice is what makes the difference. Delicious!

I've been trying different recipes for this type of rice pudding for years and this one, beyond a doubt, is the best I've ever tasted! This is my first time using the arborio rice for pudding. I didn't have any vanilla beans but used a few drops of pure vanilla at the end of the cooking period. The pudding was rich and creamy and the rum and orange combo was superb!

It takes a while to make, but it's a wonderful refreshing and fulling dessert. I had to use vanilla vodka instead of rum, but it came out just as nicely. The orange zest makes all the difference.
