    These were so simple and super delicious. I made only a couple of changes to the recipe, and they turned out fabulous. First of all, I zested a lemon into the batter. I also left out the frozen blueberries, as not every family member enjoys blueberries in their pancakes. They cooked up light and fluffy and the little bits of ricotta left in the batter were tasty surprises. I served diced bananas and fresh blueberries with the pancakes and the honey syrup. My family is HOOKED!

    These were great and amazing--but only if the ricotta was inside the pancake. And that's not really the recipe's fault so much as the chef's lack of working with things, but as a novice, I made these and it turned out really well. I would recommend this to anyone!

    i really wanted to make these, but I didn't have the reccomenned mix and so I had to use bisquick. I also had to use fresh blueberries because this was kind of last mintue. If you are going to use bisquick---you might need to use a little more than 2 cups, but then do everything else the same. I liked these pancakes, and next time iI'm using the recommened mix and I'm sure it'll be even better!!!!! plus I used part skim cheese and it was still good.

    I've made Giada's Ricotta Pancakes a few times along with other breakfast fav. for my family, but the winner are always the pancakes. The key is not to over mix the batter and make sure the blueberries go from the freezer to the batter.

    I love this recipe. It is a new Saturday-morning favorite for both my husband and me. I used frozen blackberries, because they were on sale and blueberries weren't, and they were great. The recipe was easy-to-follow, and the pancakes tasted wonderful. I like that there's a little bit of a shortcut using the mix, but still enough work to make feel okay accepting the accolades!

    WOW! I have never had such a light fluffy pancake! My teenage son asks me to make these over and over! I zest a lemon into the batter, and it is even more amazing!

    I adore Ricotta cheese, but these just don't work! The flavor isn't there, and they're hard to work with. Bobby Flay's Ricotta pancake recipe is much better.

    This was the best pancakes i have ever eaten.. Oh my goodness these are soo moiste and the syrup is sooooo good on top.. I will never make just regular pancakes ever again.. THANKS SOOO MUCH GIADA!!!!!!!!!!! <3

    We had breakfast for dinner tonight, and these pancakes are wonderful! Easy and quick enough for breakfast or dinner on a busy night. I loved them too!!

    I'm not a huge pancake fan but these are in a league all by themselves. So delicious and so simple. If I can make these, you can too. I used fresh blueberries and I didn't have pancake mix, so I found a simple recipe online and used the dry ingredients.
