    I loved these pancakes and the syrup. Who knew that I could make homemade syrup!?? (I miss the thickness of store-brought syrup, but I could do without the high fructose corn syrup in it

    I used milk instead of water (I usually do that with store-brought complete pancake mixes too and it turned out great. Oh, and I didn't add blueberries either. The pancakes were very rich but still tender and flavorful. And it's true, you can't taste the ricotta cheese at all. This will definitely be my new go-to pancake recipe!! Thanks Giada!!!!

    I am going to be eating these pancakes for the rest of my life. They are easy and light and moist. The mild flavor of the cheese goes perfectly with tangy fruit. I used frozen raspberries instead of blueberries. And I am looking forward to trying all kinds of other fruit in the future.

    The honey syrup was lovely because it accentuated all the flavors of the pancake without overpowering them the way maple syrup tends to. Also, adding whip cream on top is a must.

    My husband swears he'll never eat regular pancakes again.

    Really tasty pancakes, however, I would use less ricotta next time as it can become "soupy" and difficult to cook evenly. The honey syrup is wonderful! I'm going to use this in place of store bought syrup as it is all natural and doesn't have that awful high fructose corn syrup.

    I made breakfast for my Mother on her Christmas Visit and these pancakes were easy to make and I will not eat another pancake other then these. They are a keeper recipe and the syrup is so light simply delicious.

    I love these pancakes! my husband and kids loved them! they are simple to make and they are not boring!!! plus the kids have fun helping! I recommend these for sure!

    Anyone that makes pancakes alot should know that you should not overbeat the batter, you really do want it to stay alittle "lumpy"

    I've made these pancakes a few times b/c they are so delicious! They are perfect to serve to visitors/guests since they taste pretty gourmet. The homemade syrup is a must since it goes perfectly with the pancakes. Give it a try!

    I found and tried this recipe to use up about one cup of ricotta that I had in fridge. I used Hungry Jack Buttermilk Complete mix as that is what was in the cupboard and a whisk so everything blended nicely - no lumps. It produced very tender pancakes that were alittle difficult to flip till I got the hang of it. I liked the vanilla flavor with the blueberries. Next time I will use more blueberries.
