My son is allergic to egg, so I do not use a complete mix, and it still turns out. I also add some lemon zest to round out the blueberry flavor. Giada is the best!!

I made this recipe and thought it was very good on its own. The ricotta helped to keep the pancakes moist and fluffy. The left over batter also kept well in the fridge over night to be used again the next day. My only negative thought was that the pancake itself was a little bland. The next time I made it I decided to give it a little punch with the zest of a lemon and it was amazing! It was subtle but tasted so good! With the lemon this is a five star recipe for sure.

I am spoiled for life. Plain pancakes will never do again....Only change I had to do was the pancake mix. I had New Hope pancake mix. I used one cup of the buttermilk and one cup of the buckwheat. I liked the ricotta so much I added more on top of the pancake while it was cooking....FANTASTIC..

These Pancakes were amazing. I used butter in the pan to cook them up. The outer rim of the pancake had a golden crisp and they browned up beautifully! I have not really ever cook with Ricotta before but I will be doing it again. We normally eat honey on our pancakes anyway but the syrup made this dish special. I love how the blueberries kept their consistancy and sort of popped in your mouth when you ate the pancakes. My husband and kids enjoyed these as much as I did. Thanks for the amazing recipe!

I made these pancakes over the weekend. They were so so good. I used fresh blueberries instead of frozen, and while the first side was cooking I dropped small bits of ricotta, in addition to what was mixed in the batter, so you could see it in the pancakes. Everyone loved them and said they wanted these pancakes from now on! I had trouble with the syrup being very thin, I just added a little more honey than it called for- and it was great with the pancakes! Will be making these again for sure- soon!

I used the recommended pancake mix and it turned out great. No one could taste cheese in it; just amazing pancakes! The frozen blueberries did the trick. Now I'm always going to use frozen!

Some people have had good results with brands other than Krusteaz, but my first attempt at these was with a Trader Joe's Pancake and Waffle Mix, and the consistency was not good! I found the Krusteaz brand and that made all the difference. My 2 year old gobbles these up and my parents asked for the recipe. I'm not much of a pancake person usually, but even I love these.

I absolutely love this recipe and so does my family, including my two year old daughter! She even wanted seconds! The flavor is awesome especially with the honey syrup. Plain pancakes, never again. Definitely a must for your recipe collection!

Ok guys, for those of you complaining about lumpy pancakes, my pancakes did not turn out lumpy, they were awesome. The only thing different that I used was "Hungry Jack's Complete Buttermilk Pancake and Waffle Mix." This is what I did exactly in this order:
1 Added the water to the mix in a bowl and whisked it, no lumps
2 Added the cheese and whisked, no lumps again
3 Added the blueberries and whisked again, no lumps
I don't know if it was the mix, or if it was the order, or both, but they turned out perfect!!
Lastly, the key is the syrup, if you do not make the syrup then the pancakes are just ok. With the syrup, magically delicious!

...who rate a recipe low...AFTER YOU ADMIT THAT....YOU CHANGED THA' ingredients. I just don't understand that. Follow the recipe to the letter, taste it...if then it isn't delicious or STELLAR...then rate it low. Can you say DUH, DUH--DUH! If you can't follow directions...it's ok. Facing it is the first step.
