I did't have fresh tomatoes on hand, so I used a can of organic diced tomatoes, drained it and followed the rest of the recipe exactly... The result was so good, I just tasted the puree, and make sure it wasn't "flavorless" by adding more sea salt and freshly ground mixed peppers. It is so good...

Easy and healthy, but was missing something. A bit mushey. I think more tomatoes and seasonings.

I followed the directions almost to the T (I cut the olive oil in half. The dish was easy to prepare, hearty, spicy, and I enjoyed every bite. My husband did too!

i watched giada make this recipe on tv a couple of weeks ago and it looked delish..i made it for dinner last night and my family loved it..the roasting really does bring out the flavors..a definate keeper

1 tsp. red pepper flakes is too much;should be 1/2tsp.Otherwise,this is an interesting vegetarian dish.

This was one of the few of Giada's recipes I haven't found fabulous. It completely lacked flavor--I may as well have been eating plain pasta. I gave it 2 stars because at least I got my veggies in! It was worth a try...but I won't be doing it again.

I give this 5 stars, not because it is actually a 5 star meal like that you would get at a fabulous restaurant. But for a cook at home meal- it is 5 stars because it is so cheap, so easy and extremely tasty, not to mention a healthy choice. I am not actually a fan of eggplant but I tried it. It took me about 10 minutes of active time and was very good. The puree has the texture of a meat ragu so for meat lovers, you can almost feel like you are having a meat dish. Be careful with the pepperoncini flakes- if you like hot, then use the full teaspoon. If you don't, you may want to use slightly less.
