    The recipe was so easy and really quick to make. I doubled the recipe and was glad I did, because my family absolutely loved it!!! This is easily my favorite roast beef recipe now and am thinking of ways to use that oh so yummy salsa on other things.

    The sauce was delicious, but I agree with the other posters....the cut of meat was very tough for the quick bake time. I too think the meat would have been better all day in the crockpot. DH loved the sauce so much he wants to put it over pasta tomorrow!

    I made this roast today for New Year's Day. What a disappointment! The meat was tough and the sauce was gross. I don't know if it was all that parsley, but it just didn't taste good. The meat alone was not too bad, but only if you got a piece that was somewhat chewable. Was so surprised due to the majority of good reviews. Thankfully I made gnocchi with vodka sauce too, because that was our dinner!

    VERY EASY TO PREPARE. MEAT WAS TENDER AND TASTY. SAUCE WAS EXCELLENT. I WOULD CUT BACK ON SALT A LITTLE BIT.

    I saw this and just had to try, but I started with a coupole of small filets instead of a roast. I also threw my garlic in the pan during the last half of cooking of the beef, added a teaspon of dijon and used tomato balsamic vinegar. It gave it some extra kick and came out perfectly. I can't wait to cook this at the next big family gathering with a roast. It was so easy and super tasty. Thanks Giada.

    I made it on Sunday and used the leftovers for a steak salad on Monday night (with some blue chees crumbles etc. And as to salad dressing, I just mixed the parsley sauce with equal amount of low fat sour cream. Made 2 great meals. Thanks Giada!
