Anyone who didn't like this recipe didn't cook it correctly! This is an absolutely great way to get people who hate cauliflower to try it. The pancetta is perfectly balanced with the parmesan cheese sauce, and the cauliflower adds just the right flavor to bring it all together. I LOVED this recipe, and so did my entire family!

My husband kept bugging me to make cauliflower, and I've never been a fan. It always seemed so bland to me. I made this and was I ever impressed! So was my husband! The only thing I did differently was use regular bacon instead of pancetta.

    It is so good!

This was the first time I ever ate cauliflower! I really like it and my husband did too. I would maybe add a little melted butter in with the breadcrumbs to make a better crust, the breadcrumbs just kinda fell off. The cream sauce was yummy.

I am not a huge fan of cauliflower and was looking for a recipe to get my family to eat it. I thought that this recipe was great and would make it again.

I AM WATCHING THE SHOW ON ROASTED CAULIFLOWER. SHE HAS SAID THE WORD CAULIFLOWER AT LEAST A DOZEN TIMES. SHE DOES THAT WITH EVERY RECIPE SHE COOKS. MAYBE SHE THINKS WE DON'T REMEMBER WHAT SHE IS COOKING..... I HAVE TRIED THIS AND IT IS GOOD

I followed the recipe and while not bad, not spectacular. I have a lighter cauliflower recipe that I will probably stick with as the additional calories in this recipe were not worth it, The sauce (roux seemed heavy and I didn't feel the pancetta blended well with this dish.
