I tried a little addition to this is a wonderful dish; chopped smoked oysters. Drain and sprinkle some chopped smoked oysters on top of the bread crumb mixture before you place this dish in the oven to bake.

My husband and I made this for lunch. It was simple to make and the house smelled wonderful while it was cooking. The finished product was great!

I tried this recipe last nite, and it turned out perfectly! The only thing I did differently was to add a sprinkling of grated parmesan cheese to the tops of the vegetables before putting in the oven to bake.

Simple to make and very delicious! It is very light, but tasty and an excellent way to eat veggies. I personally LOVE eggplants and this is one great way to savor it without worrying about the calories!
