Mmmm--I had never made fennel--didn't even know which one it was at the grocery until I saw it on the show. This is realy good--love the crispy/salty parm with the anise flavor. Not strong at all! Try this--it is SO easy and a wonderful change of pace.

I am always searching for vegetable dishes that are outside the norm (I've eaten one too many green bean casseroles! and this is wonderfully different, not to mention delicious and easy to prepare. My mother-in-law made beef tenderloin for our holiday dinner, and this was the perfect accompaniment. Leftovers were fantastic after being pan-fried and heated through. A perfect vegetable dish!

This was sooo easy to make. I made this with Giada's Salmon in Lemon Brodetto with Pea Puree. Everybody loved it. Even my brother, who doesn't like fennel. He actually asked for seconds, but there weren't any!!

I had a large bunch of broccoli on hand (which regretfully is my least favorite COOKED veggie, and I love good food. So I decided to incorporate it into the roasted fennel dish. Wow, was it fantastic. A great combination of hearty veggies which complimented each other so well when roasted. I was really pleased with the outcome. I now have a new side dish which is SO easy to prepare. Oh I almost forgot, I also added a few thinly sliced shallots.

I really do not care for fennel but this was uite good and my husband, who is a fennel lover was crazy about it.

I'm not a big fan of fennel but this dish was delicious. Roasting it took off some of the licorice edge, making it smooth and mellow. Yum!

Like my daughter, I too am a picky eater. Just recently I thought I would make a new years resolution to eat healthier and be a better example to my 3 year old daughter. I wanted to try a vegetable I haven't tried before and this one looked easy enough to prepare. This recipe exceeded my expectations and when my daughter saw me eating it, she asked for a bite. She ended up eating almost two servings worth and told me it was very yummy and her favorite. This dish is something that I will surely make again and again. Thanks Giada!

The fennel takes on a mellow new flavour and the crispness of the parmesan adds a nice touch.

I only cooked it for 20-25 minutes. Came out perfect.
