    I do not like licorice but love fennel. I have fixed this numerous times since finding this recipe and we love it. Some times I will added sliced sweet onions and roast with the fennel. This is definitely a keeper.

    This is the first time I cooked fennel, normaly I make a cold salad, it was excellent, my husband loved it :and it was easy to make.

    Wow! I have passed the grocery veggie isle so many times, wondering what this vegetable was! Yet alone, how to cook with fennel! This dish is awesome! I felt like I a gourmet chef! My husband went nuts over this dish. And I took it a step further with the leftovers...I made grilled Dubliner cheese sandwiches.
    Since the roasted parmesan and fennel dish is very flavorful and salty (for my taste... I use the Dubliner... I am a cheddar buff, and this cheese has an understated cheddar flavor sweetened with a berry flavor. Put the roasted fennel and parmesan and Dubliner cheese together... butter your bread and "grill" it; and you will have another tastebud trip to the moon and back!

    This is great. I add a little garlic to it and yum yum. Great to mix in with left over rice too.
