    I've never been fond of vegetables. They've either been too soggy, bland,lacked visual or olfactory appeal.
    Vegetables prepared this way are delicious, visually appealing and I'm eating more vegetables now than in my previous 50 years. If you don't eat all of them when first cooked, they also are great added to omelets or made into frittatas.

    I made this last night as a side with some steaks that I grilled and this was great! I really think it was supposed to be 2 TSP of pepper instead of Tbsp--that's what I used and it was perfect. I know if I had used the Tbsp the recipe called for, it would have been way too much and we like pepper.

    I added one fennel bulb to the mix and it was a great recipe. I will defintely make this one again and switch up the veggie whenever I'm in the mood for a change. A definite keeper--so easy to throw together, but it tastes great!

    The vegetables were terrific. The blend of herbs and variety of winter veggies was fabulous. I made this for my family along with the OssoBuco. One of the best meals I have ever cooked.

    easy to make fast , i made a beef and tamatoes w/moshrooms and made this roasted patatoes ,carrotoes ,parsnips and brussel sprouts . fantastic came out great .many thanks

    I never knew that parsnips and brussel sprouts tasted so good. The combination of flavors were wonderful together. Everything ended up with a cripsy, sweet, carmelized finish. This was fabulous with the Osso Buco recipe.
