    Soooo good!!! The combinations of the spicy sauce and the sweet butternut squash was fantastic!!! It was so easy too!! I will be making it again!!!

    Excellent! We like things spicy - so the vegetables were a tad too mild for our taste - I added 1 to 2 teaspoons of Chipotle Chili powder and 1/2 teaspoon of Cayenne powder to the roasted vegetables. I will definitely make this again.

    These tostadas were delicious! I did bake the tortillas instead of frying them. I also mashed up an avocado and put some on the tostadas before adding the veggies and chipotle cream sauce. I will definitely be making this again.

    Saw the show, forgot the veggies when at the grocery store, so bought a yam, red onion and zucchini. Roasted according to recipe. Made half of the sauce recipe with sour cream and added a tablespoon of mayo and a little honey to suit my taste. Used lemon instead of lime. Purchased a bag of ready-made tostadas and just heated briefly. Delicious! Will make this often,changing up the roasted vegetables.

    I made them on Monday night and they were FANTASTIC! My husband and I loved them! No modifications to the recipe needed. The different textures of the soft butternut squash, crunchy tostada and creamy sauce makes it yum, yum, yum!! You don't even miss the meat. Very healthy and filling! Will definitely make again!

    I have one word for this recipe,,,AWESOME!! I did not make them as tostadas but served them as a side dish to the lentil veggie burger. The cumin added a wonderful flavor to the veggies. I did not make the chipotle cream sauce but will next time. A definite keeper.
