This is a fabulous, crowd-pleasing dish. However, I tried both with and without bone, and I preferred without. The flavors of the stock and tomatoes pervade even boneless meats, and the bones made it harder to eat and less attractive. Plus, where in the world can you find skinless, but bone-in meats? I couldn't.

    Good:
Love the flavors. Chicken comes out moist and tender. The thighs do seem to soak up a bit more flavor.

Not Good: I didn't like the texture of the prosciutto (soggy and crispy at the same time -- just weird, but I loved the flavor that it added.

Next time I make this, I think I'll add green onions with garlic, and add grilled peppers at a later stage in the cooking. The peppers in this recipe turned out a bit over-cooked.

I served this over angel hair pasta and it was wonderful! I've been to Italy and this tasted like something I would have ordered at a small resteraunt in Florence- very Tuscan!

This is one of the most delicious dinners I have ever prepared. The flavors marry together to produce one of the most delicious dishes I have ever tasted. My husband asks for it all the time now. Tonight I am going to try it with cod instead of chicken....I think it would be just as good. You can't go wrong preparing this.....for an evening dinner or for a special occasion.......it is absolutely wonderful. It really makes a memorable impression on anyone who has it.

I liked this alot. Made great leftovers. The only thing I will do differently is put in the pepper last. I hate when the skin starts to seperate from the flesh.
