    I added bacon to this recipe which gave it some flavor. I found that the soup tasted much better the next day. I still think it was missing something but I can't put my finger on what it is. I will try this again after I read other reviews.

    This soup exceeded my expectations (and my family's as well! So much flavor and I love how the polenta thickened the soup. I made it exactly as written, except I added one can of cannelini beans (rinsed and drained at the same time I added the polenta. I will definitely add this to my winter rotation.

    This is a tasty soup. I didn't have plum tomatoes since they are out of season so I used a can of tomatoes and chopped them. It actually made the dish very saucy but delciouus!! Definitely a keeper and hits the spot on a cold night. Can't wait to make this again.

    This was a great, simple, healthy meal for the family. I added some shredded chicken for some added protein, which really rounded out the soup. I think it needs a little more salt and pepper than suggested, but other than that the recipe was spot on!

    Made this tonight and its a definite keeper!! I just moved to a new town and unfortunately, the grocery store I went to didn't have polenta. I had to substitute barley...but it was still delicious. Nice and thick, but I'm sure not as creamy. I also roasted some shrimp (olive oil, salt and pepper and added to the individual bowls. So tasty!! I plan to freeze half and take the rest to work for the next few days. I WILL make this again!!

    I loved this soup! Very tasty. I will add less pepper next time. I added a whole tube of plain polenta and I used double the amount of broth. I also added canned white beans to it and then just as I plated it I added sauteed cubed extra firm tofu. This is a lovely recipe that can be used as a base for lots of combinations! Delicious!

    Excellent! My five-year-old-picky pants even liked it! We didn't have two zucchini ( well okay, we had them, but they were fuzzy so we opted out, so we used a combo of summer squash and patty pan, used half of a large purple onion and regular polenta. With the regular polenta you need to simmer it for about 25-30 minutes....I ink next time, I will try cooking it ahead of time and adding it towards the end of the cooking time....super dee duper good!!!!!

    This soup is so quick, delicious, easy and healthy! I've been thinking about all the additional vegetables and variations I will try next time. I packed up half of it for freezing and had to pull it out of the freezer to serve for lunch today - such a hit! My husband hates vegetables and had no idea how many he was eating;- Priceless!
