This was wonderful!!! My husband and I just loved it. Will increase the polenta to 1/2 a cup next time.

This was an amazing soup!! My husband and I love all different kinds of soups, and this one will definitely be added to our most liked list. It was so hearty and it was even better leftover for lunch. Wouldn't change a thing!! Thanks Giada

This soup was delicious, quick and easy. The polenta lends a creaminess & thickens the soup nicely. I did cut back on the amt. of oil used to cook the onion, and also used 1 teaspoon of salt rather than the 1 tablespoon mentioned in the text of the recipe. My husband, who isn't a fan of tomatoes or zucchini, went back for seconds! YUM!!

This soup is delicious. I added a piece of parmesan rind to the soup and it gave it such a wonderful flavor. Also I had 1/2 a bag of fresh spinach which I added at the end of the cooking process. So healthy and very yummy!

Love this recipe! I've made it three times already. I couldn't find instant polenta, so I used orzo pasta instead. I also added a a diced red bell pepper and a can of drained and rinsed Great Northern beans. Yummy!

Made it twice, first time the tablespoon of salt proved disastrous! I made it today for company, less the tablespoon salt, just eyeballed the amount--it was amazing! Turned out super delicious, my in-laws were in awe over my cooking! I have given my mother in law the recipe to try at home. It's a winner. I will make it again. Also, Pecorino Romano on top as a finish proved to be such a special touch! No leftovers here!!! A+
