This soup has great texture: chunky vegetables in creamy polenta. I served this as a side along with Ina's Parmesan Chicken. As others mentioned, I agree the butter isn’t necessary if you'd like to cut some fat and calories; or, at least not as much butter. Also, I'd recommend not adding a full tablespoon of salt at the start, maybe half as much and then adjust at the end if needed.

Delicious & hearty vegetable soup! It is easy to prepare & comes together quite quickly. Will definitely make again.

I just made this soup to keep me busy during the hurricane hitting NYC. I thought the soup was very good but next time I make it I wouldn't add the 2 gloves of garlic. Maybe just a small one. I also couldn't find the instant polenta so I used medium ground corn meal. It was a bit too grainy for me but it was the same effect I guess. Overall I will make it again just tweaked a little. I like the idea of adding chicken or sausage though. Oh, I also didn't use thyme just because no surprise but my grocery store was out of it.

Very easy, quick and tasty! I didn't have fresh tomatoes so I used a can of diced tomatoes, drained. Garnished with pecorino romano... DELISH!

Fresh-tasting yet comforting soup. At the end I added spicy italian poultry sausage I had browned separately and topped with pecorino romano. I did not add butter.

Wonderful!! Have made this twice, most recently I added chopped up left-over baked chicken and cilantro at the end. It is excellent as it is, but a great soup for left over meat or chicken! The polenta really added a creaminess that feels hardy without the calories of cream! Crusty bread and a salad...perfect for football season tailgates!!

The soup was very easy to make and did not require any special ingredients. It was delicious, satisfying, and healthy. I have never thickened a soup with polenta before and think the texture it creates is very nice. I also like that the recipe does not use milk or cream. I think this is a great alternative to creamy soups. I tasted the soup before adding the butter. I did add the butter but think the soup was just as good without it. Thank you. Excellent recipe.

This is one recipe I will share with my friends who always search for new recipes that are easy, healthy and worthy to share with company. I added grilled chicken and served with crusty bread. Don't be afraid to serve a hot soup in this heat - the ingredients in this recipe are at their summer peak and meld beautifully together with the polenta. Note: It may be hard to find the quick cook polenta in your area, so make sure you do not substitute the pre-made kind in the tube.
