This was a cinch to make and really made an impression on our guests! I served the salmon over some simple Olive Oil & Garlic Couscous. Wow!

Giada's recipe for Spinach Salad in a Parmesan Frico Cup was a perfect complement.

I made this exact recipe minus the vegetable on top of the fish and boy what a difference this recipe makes. I also didn't do individual foil packets but put it in one big dish and covered it with foil. Definitely going to be one of our family favorites.

This dish was so easy to make and so delicious. The salmon was tender and flaky and the shallot tomato salsa( that is what I call itwas a perfect partner to this dish.

    Thank you!!

I made this after reading the recipe in the 'Everyday Italian' cookbook. I had been wanting to cook salmon at home, but was always worried about drying it out. This recipe was fantastic! The salmon cooks in a pouch of liquids and vegetables, and is moist and delicious. I loved it!

the relish on top gave the fish so much flavor and the pouch helped to seal in moister so it was flakey but still juicy and packed with flavor. wow, i loved it and my boyfriend keeps begging me to make it again!!!

Tried this recipe for the first time just last week. It was simple, delicious and oh-so-easy on clean-up! Also tried it with other fish which proved just as good as the salmon.
