Very easy, I used wild line caught salmon and sprinkled some mint leaves onto the Brodetto for presentation purposes.
Used the leftover brodetto and puree two days later with Halibut. Just as good.

This dish is gorgeous and very simple to do. The brodeto and pea puree can be made ahead of time and the salmon skinned at the store leaving you a quick "company" dinner.

What a great dish! Everyone loved it, even a guest who, unbeknowned to me, has never liked peas. There's definitely a few steps to prepare the dish, but you can do everything ahead of time, so you don't need to be in the kitchen getting it ready the whole evening. Definitely a re-do dinner.

My husband and I love this dish, and we look forward to making it many times in the future. It's a delicious, easy, yet elegant way to prepare salmon. I love peas, but since we're watching carbs, I substituted edamame for the puree, with wonderful results. I'm inspired to try different variations: Asian, with a soy-ginger-garlic broth and some wasabi in the edamame puree; Mexican, with a garlic-lime-chile broth, black bean puree and avocado salsa, perhaps with red snapper instead of salmon. But this recipe is lovely as it is; thanks, Giada, for so many great Italian recipes that are simple enough for every day but always authentic!

I cut the recipe in half to practice. It was excellent but I should have cut the salt into quarters! A little salty but perhaps I should buy salt free frozen peas. The lemon brodetto was excellent on the grilled asparagus too.
    Definitely a company entree...
