This recepie goes together so fast and easy and it makes an elegant presentaion. I added a small dollop of pesto on top of the salmon after it came out of the oven, then garnished with a few bits of the leftover tomato slice and a tiny sprig of fresh dill.
My husband was impressed!

I loved the idea of a fast and easy way to make salmon with a twist. The pastry puff, already being buttery, complimented the salmon well and the pesto sauce added that little umph to bring it all together. My only complaint, and it may be the pesto that was store bought, is that it was a little too oily for my liking. That said I still loved the dish!
