    I made a mascarpone substitute with cream cheese, heavy cream and added a touch of honey leaving out the rum and then followed her recipe for the pineapple mixture and it was so good my 15 year old ate it.

    The best way to eat pineapple:- Im in pineapple heaven Simply loved the idea had it for a mid-afternoon snack. Now I will make it for guests as dessert.

    This was amazing. I was surprised to find Marscapone in my supermarket. I couldn't find any pinenuts though. Which was surprising because I have been able to get those in my supermarket. So instead I used slivered almonds that I toasted. It is awesome and so simple. I think I will add toasted coconut to the top of the marscapone. This is an awesome and simple dessert. Will add to my reicpe collection.

    This dessert was so easy to prepare. When tasting the mascarpone and rum mixture by itself, I thought it was too "rummy" and wasn't sure how it would work. However, once it melted atop the pineapple and pine nuts, and mixed with the pineapple juice, honey and butter .... YUUUUMMMY! The rum just becomes another layer and isn't over-powering at all. I'll definitely use this easy to prepare dessert to impress the next dinner guests!

    I've served this many times. It's fast and easy and delicious. I rarely have marscapone cheese on hand, so i just serve the pineapple and pine nuts with a dollop of vanilla bean ice cream on top. people absolutely rave about this dessert.

    This treat has a lot of major things going on like, quick and easy, delightful and impressive, and healthy and delicious ALL AT THE SAME TIME! Giada is one of those chefs that manages to stay trim and healthy proving that you can take a simple fruit like pineapple and turn it into a heavenly feast with just a few ingredients. I LOVE this! Thanks once again for the great recipe.

    I substituted Kahlua for the rum, plus poured alittle over the pineapple just before the mascapone.
    What a tropical delight!
