I took the advice of some other reviewers here and added some grilled chicken breast which definitely makes it a more complete meal. Also added some dried cranberries which peps up the flavor as well. The only tricky part is getting your carrot "ribbons" to be right, but if you are ok with them not being uniform and don't press too hard with your peeler you should be good. Highly recommend. Try with hot curry for more flavor.
This recipe is an easy snack as all that takes any time is the carrot shaving. It is also great to make in larger batches and put in plastic containers for some easy at work lunches.

It was a bit of a pain using my veggie peeler to make the carrot shavings, but this salad over all was really easy to make for a great result in flavor and color. I had some leftover dill vinaigrette that I used instead of her curry vinaigrette and I also added some chopped scallion just because. I'd also plan on one to two carrots per person rather than doing them by weight. A pound and a half is a lot of carrot!

This salad was easy to make and such a nice escape from everyday green salad. The curry is not overpowering, its just really tasty!!!

I saw this recipe on Giada's TV show and thought it sounded yummy. Well, it was. I served it as a side dish (with pork loin but see how it could just as easily be a light and refreshing lunch on it's own. As I read the reviews before making it, I added 1/2 TBS of curry first, tasted it and went for the entire 1 TBS that the recipe called for. Not overpowering at all but just downright delicious.

I just whisked up the dressing instead of dirtying up the processor and used 1/2 the oil. This salad was really interesting and different. I wasn't sure about it and next thing I know, I had eaten every bit of it (I made 1/2 recipe. I might like to chop up the carrot strips a bit next time. They were pretty long.

Excellent recipe for a unique salad - a real treat for raw food adherents and anyone who enjoys a really good salad. Make sure to get a good quality curry for the dressing.

Decent recipe, very unique, not my favorite but still quite good. Incredibly easy and quick to make. Do the dressing ahead of time to save yourself the trouble.
