This dish was great. The unique and distinctive flavor of the Asiago cheese was worth the expense. I read nearly every review of this recipe before making it and was glad that I did. I paid particular attention to the ratio of spinach to ricotta as suggested by another reviewer. I prepped 3 boxes of spinach and only used 2 of them and it worked out well. The other box won't go to waste as it is ready to be used in another recipe.

I made this last night for friends. Made it exactly as written and loved it. Very easy to put together ahead of time. Great flavor. Just poured sauce over right before baking. Everyone loved it.

This is a wonderful recipe! I LOVED the asiago cheese. Overall, it was very rich, and had a wonderful flavor. I was unable to find thick pancetta in my local store, only thin, it worked ok, but I'm sure the thick cut would have made the recipe! I can't wait to try it again, and I'll work harder at finding thick cut pancetta! Thanks Giada!

When I was putting this together I fussed about how much work it was but boy when it was finished it was worth it! The only adjustment I'm making is we personally are sauce people so I'm making extra sauce the next time since now I know. You get the meatiness from the pancetta and your vegetables with the spinach and the asiago cheese was sooo good with this dish.

This is one of the most amazing dishes we have ever made. This recipe is kid friendly - our kiddos loved it and we have one very picky eater. I did substitute smoked bacon for the pancetta and will make it this way going forward. I did not substitute anything else and the directions for making the sauce are spot on. I would recommend this to anyone, but it does take a bit of time from start to finish. Enjoy!

Made this for our Olympic Opening party and everyone loved it. I did double the sauce as well and had a little left over for another use. I did use more garlic than stated in the recipe and would either use more pancetta or maybe smoked bacon next time. I would have liked a little more flavor from the pancetta. Overall great recipe.

I made this after seeing it featured on Giada's show a couple of weeks ago. Decided to try my hand at something different, as it looked within my scope of cooking ability (not an expert by any means!. Anyway, had to make a couple of adjustments due to the availability of certain ingredients in my small town. Substituted the bacon for the pancetta, used 2 boxes of the frozen chopped spinach and 1 bag of shredded cheese (Italian blend. My family raved about this. I did double the sauce after reading other reviews and that was definitely a plus. We even had a little left over to go with the few leftover shells the next day (almost like Fettucini Alfredo. Will definitely become a family favorite for special gatherings. As a working mom, stuffing the shells was a little time consuming so probably wouldn't make it on a weeknight but definitely for Sunday dinner or a potluck.

I loved this recipe as I find shells to be one of the most boring things to make and eat. Usually you're stuffing some bland ricotta in and covering it in a pulpy tomato sauce, maybe covering with some stringy mozzarella cheese. This was such a great twist on it. I substituted 0.6 lbs of spicy Italian sausage for the pancetta, but I'm sure the pancetta would be delicious as well.

I planned this mean for a birthday dinner for my son and when we tasted it the filling was bitter. I don't think the quantities printed on the recipe are correct - 2lbs of spinach to 15oz of Ricotta?
I ended up throwin the entire dinner out and you know that Asiago is very expensive.
I have no idea why the filling was bitter - someone has told me that spinach can be bitter. This is the firs time i have had a dinner failure
Please check the ingrediients to be sure they are accurate!!!

This recipe is outstanding. So easy and sooooooooo yummy. It freezes nicely too. After I thawed it-I just added a little more cream when I warmed it up and it tasted just as fresh. Loved it! Way to go Giada-you rock!
