The first time I made this, my wife walked in the door and said, "It smells like Heaven in here." Once served and the first bite was tasted, there were no words; only "mmmm" and "ohhhh." Great stuff.

By the way, I've made this half a dozen times and haven't used the chocolate. I have boosted up the amount of garlic and thyme.

This is a great recipe, the especially good directions help divide prep time over the entire span of cooking the meal. This is important, as you do not want to add any more time to this 3 hr meal. My mom used to make a similar recipe that included green beans in the sauce. Instead, I sautéed green beens and artichoke bottoms with rosemary and garlic and served as a side. I tasted great when you incorporated the beans with a bite of the short ribs and pasta...I may add this to the recipe next time.

Note: Used whole wheat pasta which is a bit healthier and the sauce is rich enough to stand up to the whole wheat. I also served the chocolate on the side, but everybody preferred the dish without it.

    Thanks Giada!

OMG - this is the BEST GIADA RECIPE EVER! I use Giada's recipes all the time, and my family has enjoyed them immensely. But this one beats all. Like other reviewers, I did not use the chocolate, as I do not like sweet things in my savory entrees.

Tasty meal. My family enjoyed it, but it did take a little longer than the recipe indicated for prep time. Definitely a nice "comfort food" meal. Wish the recipe would give slow cooker (crockpot variations. This would be a nice meal to come home to, but definitely not one that could be whipped up after a 10 hour work day.

This is an excellent recipe and pretty easy to follow and do. I've done it a couple of times and it has always been a big hit. I did omit the chocolate. I'm not a big fan of sweets in my foods.
