    I am making them again for company, they are super easy and everyone likes to help. I do the deep frying part.

    I am not a fan of spring rolls and actually made them for my husband but he kept nagging until I tried it. I finally found a spring roll I like and is super easy to make.

    Just made these and WOW am I shocked. I followed the recipe to the T however, I left out the cucumber dip. The flavors were so delicious in the rolls itself that I obmited it. Great for entertaining and simple to make!

    I just made these and they are awesome!!!!!! I had to leave out the shrimp because my friend has a shell fish allergy but they are still great!! I also served with soy sauce. Thius is a keeper. As usual, job well done Giada.

    Ok, yes they're egg roll wrappers, who cares. ANYWAY, for those of us who actually cooked the recipe, these are AWESOME. Unlike she said on the show, wrappers are not necessarily available in the store. I couldn't get them, so I made some, yes, egg roll wrappers. Made the recipe a little fussier, but still turned out great. Also didn't bother with the cucumber/yogurt dip, but just used spicy mustard. And cut costs by using yellow onion rather than a shallot, and only button mushrooms. Regardless, these were fantastic, and will be made again.

    First of all, on the episode and in the photo is an egg roll wrapper - not a spring roll wrapper. Spring rolls are generally not fried but rolled and eaten, although they can be. Agreed...nice sauce, not with this recipe. I also use large chunks of shrimp, not pureed....makes a nicer presentation.

    Had never made spring rolls before, but have made just about everything else. Used bean thread noodles, all white mushrooms (they were on sale that day, and shrimp. Agree with the previous poster - the cucumber dip was good on its own, but did not pair well with the spring rolls. We also used sweet chili sauce for dipping.

    This recipe is very adaptable.... could substitute chicken, pork, or anything else in place of the shrimp.

    The filling of the rolls was delicious, however, the wrapper just wasn't crunchy enough. Lumpia wrappers get crispier and they're easier to work with in my opinion. The cucumber yogurt dip was good but not with the spring rolls. Tastes better as a veggie dip. Instead we just used an asian sweet chili sauce.
