    I was soooooo looking forward to this for company! The feta cheese was impossible - kept crumbling. I took a suggestion from on of the reviews and served the skewers on lettuce and crumbled the blue chees over all.

    These were AMAZING! I did have problems with the cheese, however. I honestly think if I had used different skewers (I had the 6-inch wood ones, that my feta wouldn't have crumbled. I had used the Athenos Feta that was packed in water, like others had suggested, AND I even put it in the freezer to harden it up a smidge. Even with all that, it still fell apart. Like I said, I'm gonna try the different skewers next time, but all in all, this recipe ROCKED! And it was a definite crowd pleaser to say the least! ;-

    A very simple and elegant looking appetizer. I followed others' suggestions and used feta packed in water, and did not have any issues with crumbling cheese.

    These were fun to make, tasty and get a definite A+ for eye appeal! I made them for a Fathers' Day barbeque and as soon as they were brought to the table they were immediately eaten by all with many oohs and aahs over how beautiful and colorful they were. All agreed they tasted as good as they looked. I did add stuffed grape leaves to the skewers, cut into 3 sections do they would fit nicely, and also red peppers.

    I had the toughest time with the Feta, so I took a cucumber out and chopped it in squares, and put that on instead and then after I put the oregano on, I crumbled the feta over the top. I think I will try again with the Atenos water packed, or if someone else can tell me what other creamy cheese will do, that would be great. Goat Cheese?

    Very good recipe. In her book "Giada at Home" she mentioned that it is better to use feta packed in water, because it is more firm and it will not crumble. I tried the feta (packed in water from Trader Joe's and it worked just fine. Try it, if you have this store near you.

    this was amazing!!! i tried to get the feta on but didnt work. then used recommended Athenos traditional. it worked. this will definatly be made again. Everyone asked for alot more!!!

    I have her cook book that has this recipe, with suggestions on how to put feta on. Trick is to use a feta that has some moisture & still firm like, "Athenos" traditional. I also used bamboo skewers which are flat not round. Go slow and in the center. Good luck!

    Recipe was yum, but will have to agree with everyone about the feta cheese. How do you combat crumbling feta????? I modified the recipe and added cucumber chunks on the skewers. I placed the blocks of feta on the side. Worked out nicely.

    The only pro about this recipe is that it looks great on a platter! I was SO excited to try this receipe - but like many of the other reviewers, I could not get my feta to stay on the skewer for the life of me. I even tried putting it in the freezer first! I ended up making the skewer w/out the feta - and then crumbling the feta overtop of them.

    I still love the idea of this recipe. I think I will make them again, but next time I will use those little bocconchini mozzerella.
