I have to say I've never had potatoes such as these before. The parmesan and olive oil really jazzed it up! Really delicious. I made the entire "Rustic Cooking" dishes last night and well....I surprised myself at how delicious everything turned out! I'm no fantastic cook or anything, but since watching Food Network, I think I'm turning into one. All of these dishes are wonderfully tasty and delicious. I did not find any of it as being hard to make, however, it does take some time to prep everything. If you can do all your prep work ahead of time, it will really help the cooking go faster!!!

I have never made potatoes with olive oil. It gave a moistness to the potatoes and the parmesan gave it that wonderful flavor. My boyfriend and his brother loved them.
