The butternut squash was the predominant flavor. Eggplant and shrimp were lost.

The recipe was bland at first so I added Parmesan cheese and a half pack of the Italian shredded cheese. It differently made a difference. I might add mushrooms next time!

Wasn't really impressed with this one. The flavors just didn't fit well with each other :(

This was a dud! Made this for company today and we were really disappointed. It's very bland. Skip this one.

Our CSA box contained butternut squash and eggplant this week so I found this recipe so I could use both in one meal. Most of Giada's recipes are fantastic, but for us, this one was a dud. The ingredients just did not work together, it was bland, and the textures were unappealing. The leftovers were practically inedible. I fished out the shrimp so that at least they weren't wasted.

This was so tasty! We halved the shrimp and doubled the garlic. We also cooked the squash about 5 minutes longer than the eggplant. Since we made it for Halloween, we used black pasta instead to get the black/orange contrast. Finally, we topped it off with red pepper flakes and Parmesan. Delicious!

My family loved this dish. This is a large recipe with an abundance of shrimp, perhaps too much since the shrimp seemed to dominate the dish. Next time I will cut back on the amount of shrimp and add more garlic. The squash was a wonderful addition. I will definitely make this again and again.

I love the easiness for making it and the flavors. I love how the squash takes the flavor of the rosemary and thyme.
    Super.

I was really excited to make this recipe now that fall weather has finally come around. I usually love Giada's food, but this one couldn't have been more boring and bland. It makes way more than 6 servings and I could barely manage to choke down one of those servings. Will not be making this one again.
