This dish turned out great. You'll need atleast 4 people to eat this, it's a lot of food. Dont forget the butter at the end, it added that special something. I let it sit for a bit and it thickened just fine. I also added more garlic for more flavor. What i liked about this dish is that it's pretty light and healthy. My only dilemma, the first time I made it, was the eggplant - it turned out a little squishy, probably because I cooked it a little longer for fear that the squash would'nt cook through. Oh, and do use fresh pasta - I make mine from scratch and it really makes a difference. DO salt your water up when boiling pasta - it will always add a ton of flavor. My teenage cousins loved this dish!

Tasted good but needed a little boost in the spice area. Made way too much. If I make it again, I'll cut the recipe in half and add some type of spice to give it a little more zing.

Fabulous and simple flavors. The butternut squash is somewhat hard to deal with, but the effort is absolutely worth it! Will make again soon!

THIS RECIPE IS AWESOME. I WOULD RECOMMEND IT TO ANYONE. IT MAKES A LARGE AMOUNT SO I ENDED UP FREEZING ABOUT HALF OF IT AND ITS GREAT! WILL BE MAKING THIS AGAIN AND AGAIN.

I don't know why this dish turned out watery. I let it simmer longer that specified, but it still turned out too watery. I don't care for the taste neither.
