I didn't read the recipe. I viewed the video and prepared it as described by Giada. She definitely didn't use 1T. of red pepper flakes, just a sprinkle of flakes. In addition, she did add the spaghetti to the olive oil before she added the water from the spaghetti. I followed the video - not the recipe and it was absolutely delicious.

I think this was good as is, if it was to be a side dish. I wanted to use it as a main course, so I cut up a precooked spicy sausage and browned it in a frying pan, cut down the red pepper flakes to "2 pinches" and added some chopped scallions with the basil leaves at the end. Oh and a light dusting of garlic salt was needed at the last minute. I'll try the other person's suggestion of smashing the garlic cloves a bit before making the garlic oil and then I can probably forgo the garlic salt.

Two more things -- I leave out the mint and I think there's way too much red pepper flakes here. 1/2 tsp would be a good place to start.

i made this after running out of butter for butter and garlic pasta but... hmm i seem to have burned the pepper flakes, not used enough cloves, and exploded the frying pan while getting the pasta water onto the hot pan of oil... i like the recipe, but how can i cook this without burning anything or myself? Can someone help me

If you love spicy foods this is your dish! If not, start with a teaspoon of red pepper. I also love garlic, so in addition to the 3 cloves, I minced a couple cloves to keep in the sauce. And I agree with below, a sprinkle of Parmesan cheese to top it off!

Excellent taste. Easy and quick to make. Great garlic flavor. The family doesn't like the red pepper flakes so I add them after in my dish.

Excellent! I love the spice of the pepper flakes and I added even more garlic because I love it! I didn't even have the basil/mint and it still tasted good! Will come back to it over and over again and I don't understand the bad reviews. I made it, ate it and actually made it ALL over again!
