This dish is so good! I have made it in the past but thought it was a bit dull...although this time I only added a half tablespoon of the red pepper, it gave it just enough pizazz, love it! Also, as suggested below I added the parm cheese and kept the garlic in, wonderful!

i love this dish, but i grew up with it. you need to do these things first.smash the garlic cloves so they release more flavor, then sautee the garlic till brown and fragant,BUT leave the garlic in the pot(i use a small pot not panif i know in advance i am making it, i will let it sit all day (the longer the better but it is GREAT in a pinch, quick meal tooremove pot from heat and sprinke red peper, you can always add more on YOUR own dish.never add that much of pepper to any dish unless you are sure you like things "the hotter the better"Next i start boiling my pasta, aldente. i reserve about 1/4 cup af water ,adding just as much as it takes to keep it moist.pour oil over pasta mixing it good.and serve.we never added any spices other then that.i would maybe try it with a pinch of parsley but nothing else!some times i sprinke parmesan cheese.(on mine alot,it makes it different

Aweful. We too had to add thick tomato sauce to make it edible. Definitely not putting this in our book of recipes to keep.

Terrible. Too much pepper, not enough other flavor. We ended up adding sauteed garlic, walnut, and diced winter squash to make it edible.

I've grown up eating this, it's one of my favorites. I almost can't believe there is a recipe for it. I always considered this peasant food growing up. But, I see what they charge for it at restaurants...insane.

I've never done the mint, but some anchovies in the oil is also good.

People who like authentic Italian cooking (I.e. not American Italian, will love this dish. Fresh, easy to make, and very tasty. Cheap too. If you're single, it lends itself perfectly to cooking for one, just reduce the portions accordingly. As the other reviewers have stated, start with a little red pepper, then add more if you prefer it (which I do. I skip the mint because I don't have any in my garden, but a tiny hint of thyme works just as well. Add chunks of fresh mozzarella, and you'll feel like you're dining in Italy.

I personally love garlic so I cooked the garlic with the red pepper flakes and left them in the oil, I just made sure not to burn them. I did not use the mint, I didn't think it would blend very well with the other herbs. I also didn't use very many red pepper flakes because I am very sensitive to spicy food. My boyfriend and I loved it.

I will note, that I have tried other recipies that tell you to discard the garlic from the oil because of the burning factor. When you take the garlic out I think it leaves the oil too bland which may be the problem with the other users. I would recommend cooking the red pepper flakes in the oil, adding the water and then tossing in some garlic at the end. Let the garlic cook a little, but again just make sure it doesn't burn. Leave it in and you will have so much more flavor!!!

    Thanks Giada...I love your recipies!!!
